Egg Beaters custard is the perfect treat after holiday indulgences

This recipe is one that is perfect after all the holiday indulging that we've done.

Egg Beaters Custard

Ingredients

2 1/2 cups skim milk, scalded

1/2 cup sugar or Splenda

3/4 cup Egg Beaters or other egg substitute

1 tsp. vanilla extract

Directions

1. In bowl, blend milk and sugar until sugar dissolves. SLOWLY stir in the egg product and vanilla.

2. Pour mixture into 6 (6oz) ovenproof custard cups. Set cups in a pan filled with a 1-inch depth hot water. Bake at 350 degrees for 40-50 minutes or until set.

3. Carefully remove cups from pan; cool to room temperature. Chill until firm, about 2 hours.

Serves 6

Optional Flavors:

• Coffee custard: Blend 1 Tbsp. instant coffee granules into milk mixture. Proceed as above.

• Orange Custard: Stir 1 tsp. grated orange peel into milk mixture. Proceed as above.

Nutritional Information using sugar, per serving: 115 calories, 93mg sodium, 2mg carbs, 1 gm fat.
