A simple oven-baked fish is the ultimate fast food. This preparation for wild-caught trout ($5.99# at Meijers) is quicker than if I dialed out for pizza. The lemons and capers in the preparation are also key components in a classic Sole Meuniere. This divine classic French dish (simplicity itself and immortalized by Julia Child) calls for a great deal of butter and, obviously, sole. If that is what you're craving, fresh sole is a bargain at Busch's for $6.99#.

Tonight I prefer an even simpler preparation for fish. I love the flavor of butter so have included a small amount in my preparation, but feel free to omit. The addition of fresh chopped herbs, such as dill or tarragon, would be delicious if you have some on hand. I sautéed some spinach in olive oil and shallot which was a savory accompaniment.

Ingredients:

lampman, baking trout
2# trout fillets 1 tablespoon unsalted butter, sliced into thin pieces 1 tablespoon extra virgin olive oil Zest from 1 lemon and 3 tablespoons lemon juice 1 tablespoon capers

Directions:

1. Preheat oven to 400Ëš. 2. Place trout on a lightly oiled, foil-lined baking sheet. Drizzle fish with olive oil, lemon juice and butter pieces. Lightly season with kosher salt and freshly ground pepper. 3. Bake on center rack of oven 12-15 minutes, or until fish flakes easily with a fork. 4. Garnish with capers and lemon zest and serve.

I'm surprised wild trout is such a good price. I just bought extra for the freezer and will try this tomorrow. Do you have any more trout recipes?

Thanks! I'm sure it will be just as lovely. Even more beautiful than mine if you put a tiny sprinkle of paprika on the fish! And lemons and capers are good with many many varieties of fish!

Ah trout...so delicious and so easy and fast. Never made it with lemon and capers though. I'll remember for next time

Lovely recipe! Our meals this week are all about using up our farm share (we usually split it, but our partners are away, so we have the whole thing to ourselves), but I think this is definitely on the docket for next week!
