Eggplant Parmesan with Francesca Giaraffa. 6-8:30 p.m. Ann Arbor Whole Foods, 3135 Washtenaw Ave., Ann Arbor, in the Cooking and Lifestyles Classroom. Eggplant Parmesan is a classic dish that originates from southern Italy. Slices of eggplant are fried then layered in a pan with slices of fresh mozzarella, basil and parmesan cheese, then baked in a tomato sauce. Frittata di carcio is made by sautéing fresh artichokes then mixing them with beaten eggs and parmesan cheese to create a crustless pie cooked in a pan on top of the stove. Funghi ripieni are baked mushroom caps stuffed with cheese, sage and breadcrumbs. The meal ends with a dessert of cantaloupe marinated in honey and cognac. The ingredients are simple, but the art of combining them with the right herbs and other ingredients makes it 100 percent Italian. $55.
